Meditorraneo used to occupy, the new Rosa Mexicano
Restaurant has improved both the location, food and
service. The new owners have stepped up the restaurant
by adding many subtle, but impressive improvements.

Looking
back into the restaurant from the bar gives you an idea
of the improvements. It offers a distinctive
sophisticated feeling while still being in Mexico.

Interior Dining
There are really two
sections to the restaurant. As you enter the restaurant,
there is a section with dining tables under a palapa,
which would be an excellent choice if there were any
chance of showers during your dining time.

Kitchen and Oven
Adjacent to the palapa dining area is the kitchen
complete with a brick oven for making Rosa's wonderful
cuisine..

The Rosa Mexicano Bar
I particularly enjoy the
bar at the Rosa Mexicano Restaurant. It enjoys a
commanding view of the ocean, including the surf break
right in front of the restaurant and is a great place
for singles to dine without feeling awkward.

The
views of the surf spots in El Anclote are excellent from
the restaurant and it is a great place to watch summer
storms in the evening time too.

The
owners of Rosa Mexicano are ex-Cafe des Artistes
employees and the flavor, service and menu reflect that
sort of quality. Authentic gourmet Mexican dishes are
offered, as well as several seafood and steak entrees.

Tableside fresh
guacamole
Once
you have your beverage and have ordered your dinner,
fresh guacamole is made to your taste right at your
table. On all of the occasions that I have dined at
Rosa's there was also a complimentary appetizer served
that was absolutely delicious.

Rosa Mexicano Stuffed
Shrimp
My
favorite dish is the stuffed shrimp. It is simply to die
for. It is large shrimp stuffed with a wonderful Mexican
cheese and wrapped in bacon grilled to perfection. If
you like shrimp, try this dish, as you will love it.
